The color change is surely due to a switch to BT709 (WEB or HDTV colors).

The video looks fine, although I don't see any benefits compared to upscaling built into your video player and a simple sharpening filter.

I upscaled IDK using simple bicubic interpolation, so it can be compared side by side. Using a custom shader (ravu/nnedi3/fsrcnn) in mpv or even just spline36 (or better but still simple: ewa_lanczos) would give better results.
This video changes the colors quite a bit and in comparison 2 quite a bunch of detail is lost in the darker upper part of the image. In comparison 3 this video just looks worse with more banding and some details becoming washed-out or completely lost. There are a bunch of artifacts around text and smaller Kanji in the ED get harder too read, although nobody's going to read it anyway xD.
If only there was a good source available. Coolmic's video looks even worse than AnimeFesta...
I think it would be nice, if you could include the official unedited translation, as I found it better without your edits tbh. Sorry :(
